Pizza


For dinner, mom 'made' pizza.

Took it out of a box and put it in the oven.

I suppose it was ok, but I ate a half piece and couldn't stomach it any more.

My pizza is much better.

I make the crust and sauce.

Pizza Crust:

2 1/2 cups flour
1 pack yeast
1 tsp sugar
1/2 tsp salt
a shake or two of basil and oregano
3/4 cup hottish water +-110°
1 tablespoon olive oil

In a small bowl combine the yeast, sugar and 1/4 cup water; leave until frothy, about 5 minutes.
Add the yeast liquid to flour and salt with remaining water and oil. Mix to a soft dough; knead
on a floured surface 10 minutes until smooth.
Place in a greased bowl; cover with plastic wrap. Let rise in a warm place 45 minutes or until doubled in size. Punch down dough and knead briefly. Oil a 12-inch pizza pan. Place dough in the center of the pan; press out to edges with your knuckles. Pinch up the edges to make a rim.


Pizza sauce:

2 lb fresh tomatoes - dipped into boiling water and skins slipped off
1 tbsp olive oil
2 tbsp basil and oregano
1 clove garlic, smashed (If desired, I dont usually put it in)

Put all ingredients into a processor and puree.
Pour into a saucepan and cook slowly until it's thick. This can take a while, have a sip or three of wine. For that matter put a drop or two of wine into the sauce, it's yum!

Once the sauce is done, make the pizza dough.

You know what you like on it, go for it.

Okay, okay...

Spread the cooled sauce on the dough. No, probably not ALL of it, this should be enough for 2 pizzas.
Add your favorite toppings.
Cover with cheese.

Bake at 450° for 12 to 17 minutes or until it looks done.

Remember; the thinner the crust, the shorter the baking time.
