mmmm penuche

Penuche is derived from a Mexican word for raw sugar, according to one source I read.

To me it just means divine.


2 cups brown sugar
1/2 cup dark maple syrup - the real stuff, not log cabin
1/2 cup rich milk or cream - that means whole milk, not 2% ifyouplease!
1/4 teaspoon salt
1/2 tablespoon butter
1/3 teaspoon vanilla
Combine the syrup, butter, sugar, milk and salt and boil until a little when tried in cold water forms a soft ball, 238° F.
Cool till tepid, add the vanilla, beat until creamy and pour one half inch deep into a medium-sized pan lightly buttered.
When almost cool, cut into squares.
